Ingredients
  • 1 tbsp coconut oil
  • 1/2 lime, freshly juiced
  • 1/8 cup honey
  • 1/2 tsp cayenne pepper
  • 2 cod fillets
  • 1/2 cup unsweetened coconut shreds
  • 1/2 cup panko breadcrumbs

Instructions
  1. Preheat oven to 425 degrees F.
  2. Coat baking dish with coconut oil.
  3. Combine the lime juice, honey and cayenne pepper and add to a medium bowl.
  4. Rinse fish and pat dry.
  5. Combine coconut and panko in a large bowl.
  6. Coat fish in lime & honey mixture then coat well in the coconut mixture.
  7. Place on baking sheet and bake for 18 minutes, or until the coconut turns a golden brown.
