Ingredients
  • 1 cup dried brown lentils
  • 1-1/2 cups vegetable broth
  • 1 15-ounce can diced tomatoes
  • 1/4 cup + 1 Tbsp tomato paste
  • 1 onion, chopped fine
  • 1/2 green bell pepper, chopped
  • 1 Tbsp apple cider vinegar
  • 3 cloves garlic, minced
  • 1-1/2 tsp oregano
  • 1-1/2 tsp smoked paprika
  • 2 tsp dried parsley
  • 1 tsp cumin
  • 1 Tbsp chili powder
  • 1 tsp salt
  • 1 tsp ground black pepper

Instructions
  1. Put all ingredients in your crockpot. Cover and cook on high for 3 - 4 hours or on low for 7 - 8 hours.
  2. Check for consistency, you may need to remove the lid for the last 30 minutes.
  3. Serve warm in buns or as a side dish. Leftover sloppy joe mixture will keep in the refrigerator up to 3 days.
