Salad Ingredients
  • 1 Tbsp. butter
  • 2 ripe peaches, sliced
  • 1/2 cup pecans, chopped
  • 8 cups arugula or other salad greens
  • 2 oz. soft goat cheese, crumbled
Vinaigrette Ingredients
  • 1/4 cup extra virgin olive oil
  • 1/4 cup vinegar
  • 1 tsp. vanilla extract
  • 1 tsp. honey
  • 1 pinch salt and pepper, to taste

Instructions
  1. Heat your oven to 400ºF.
  2. Add the butter to a small baking pan. Cut each peach into slices; remove and discard the pits. Place the peaches, into the melted butter. Roast 10-15 minutes, or until the peaches are soft and begin to brown at the edges. Use a slotted spatula to remove the peaches from the pan.
  3. Prepare the vanilla vinaigrette. In a small bowl, whisk together the olive oil, vinegar, vanilla extract, and honey. Season to taste with salt and pepper.
  4. To serve, toss the salad greens with 1/4 cup of vinaigrette. Divide among four plates. Top with peach slices, chopped pecans, and goat cheese. Serve with remaining vinaigrette.
