Roasted Delicata Squash

Ingredients
  • 1medium Delicata squash
  • 2Tbsp olive oil
  • 1dash salt and pepper, to taste
Instructions
  1. Preheat oven to 425. Wash squash and slice the ends off and discard. Cut squash into 2 inch slices and arrange flat on a large baking sheet.
  2. Drizzle with olive oil and add salt and pepper. Roast for 15-20 minutes, or until golden brown. Remove seeds before eating, but leave the skin on – it’s edible and delicious!
