Roasted Delicata Squash
A beautiful side dish full of sweet, nutty flavor.
Gluten-free, Vegan, Vegetarian
salt and pepper, to taste
Preheat oven to 425. Wash squash and slice the ends off and discard. Cut squash into 2 inch slices and arrange flat on a large baking sheet.
Drizzle with olive oil and add salt and pepper. Roast for 15-20 minutes, or until golden brown. Remove seeds before eating, but leave the skin on – it’s edible and delicious!
