Roasted Garlic Mashed Potatoes
A vegan holiday staple.

  • 5lbs red or yellow potatoes
  • 1head garlic
  • 1Tbsp olive oil
  • 1/2cup Earth Balance Buttery Spread, melted
  • 1-2tsp sea salt, to taste
  1. Preheat oven to 425. Slice the top off the head of garlic and drizzle with olive oil. Wrap with foil and roast for 30-40 minutes, until tender. Squeeze garlic cloves out of peel and discard peel.
  2. Add the potatoes to a large pot of water and boil for 20-25 minutes, or until tender. Drain and return to the stove for one minute, to evaporate and remaining water.
  3. Mash the potatoes by hand and add the roasted garlic, Earth Balance, and sea salt. Combine until mixed through. Enjoy!
