Sautéed Ramps with Pecorino

  • 1Tbsp olive oil
  • 1clove garlic, minced
  • 1bunch ramps, cleaned & trimmed
  • 1pinch salt and pepper
  • 1tsp pecorino cheese(can also use Parmesan)
  1. Heat a pan over medium high heat.  Add oil and garlic, cook for 1-3 minutes and then add ramps. 
  2. Sauté tossing with tongs, until the ramps begin to wilt. Remove from heat and sprinkle with salt, pepper and pecorino. Serve with fresh bread, cooked grains, or as a side dish to grilled meats.
