Ingredients
  • 1 lb black beans
  • 1 Tbsp olive oil
  • 6 cups water
  • 1 medium onion, diced
  • 5 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 1 Tbsp cumin
  • 1 bay leaf
  • 2 tsp salt

Instructions
  1. Place the beans in a big bowl, cover with water, rinse and drain.
  2. Place all items in crockpot.
  3. Cook on high for about 3-4 hours, testing after 3 hours. Add more salt if needed.
  4. Remove the bay leaf and serve warm or refrigerate for 1 week.
