Slow Cooker Split Pea Soup

Ingredients
  • 2 1/2cups dry split peas
  • 1large yellow onion, diced
  • 4cloves garlic, minced
  • 3medium carrots, chopped
  • 3medium stalks of celery, chopped
  • 2medium red potatoes, diced
  • 5cups vegetable broth
  • 1cup water
  • 2 bay leaves
  • 2tsp. dried parsley
  • 1tsp. thyme
  • 1tsp. salt
  • 1tsp. pepper
Instructions
  1. Toss all ingredients in the crock pot on low for 6-7 hours, or until peas and vegetables are tender.
  2. Add additional water if the soup is too thick.
  3. Remove the bay leaves and serve warm.
