Spinach Salad with Mandarins & Pecans

Ingredients
  • 8oz spinach (about 5-6 cups)
  • 1cup mandarin or navel orange segments
  • 1/2cup red onion, chopped
  • 1/2cup pecans, chopped(can also use almonds or walnuts)
  • 1Tbsp orange marmalade
  • 2Tbsp red wine vinegar
  • 1/3cup extra virgin olive oil
  • 1pinch salt and pepper, to taste
Instructions
  1. Combine spinach, mandarins, red onion, and walnuts.
  2. Whisk together marmalade and vinegar, then stream oil into dressing while continuing to whisk.
  3. Pour dressing over salad, season with salt and pepper, and serve.
