As certain cheeses age, their flavor can completely change. Cheese can be washed with herbs, alcohol and spices, or left to mold for months or years. The environmental conditions where a cheese is made affect the cheese as well.
Swiss cheese was made in Switzerland as early as the 14th century. Its production and location produced the unique look and taste that we now know and love. Natural bacteria gets trapped in the warm cheese curd as it’s separated from the whey. As the cheese cools, the gas emitted from the growing bacteria inside creates the distinctive Swiss cheese holes.
