While our community classes have been canceled through the end of April due to on-going COVID-19 concerns, you can still join us and East Side Table for a virtual budget cooking class!
We’ll live stream a cooking demo using pantry staples to make this Sweet Potato Curry over Brown Rice.
Below is the ingredient list so you can plan to make it along with Terese Hill of East Side Table for Tuesday’s dinner (or try this recipe out on your own anytime too). You might already have some of these pantry staples and all of the dry ingredients will last in your pantry as you limit your trips out of the house during this time. If you have any questions, Mississippi Market’s Community & Event Coordinator, Katie Marty, will also be available on live chat during the virtual class.

Sweet Potato Curry over Brown Rice
- 1 Tbsp. olive oil
- 1 cup long grain brown rice
- 1 15 oz. can coconut milk
- 1/2 bunch cilantro
- 2 small sweet potatoes
- 1 medium lime
- 1 to 2 Tbsp. red curry paste
- 2 cups dark leafy greens (spinach, kale, etc.)
- 1 tsp. granulated garlic
- 1 pinch salt and pepper, to taste
