Ingredients
  • 1jar (10 oz) sauerkrautwith liquid
  • 1 carrotdiced
  • 1rib celerydiced
  • 1tbsp caraway seeds
  • 4cups low sodium chicken broth
  • 6-10ounces sausage (kielbasa or smoked)sliced
  • 1-2 small red potatoesdiced

Instructions
  1. Preheat oven to 400°F. Arrange sausage slices on a sheet pan and roast for 10–15 minutes, until browned. This step builds flavor.
  2. Meanwhile, heat 1 tablespoon oil in a soup pot over medium heat. Sauté onion, carrot, and celery for 5–7 minutes, until softened and fragrant.
  3. Add the chicken broth, caraway seeds, potatoes, and apple. Bring to a gentle simmer and cook for 10–15 minutes, until the potatoes are tender.
  4. Stir in the browned sausage and sauerkraut (including the liquid). Simmer gently for another 5–10 minutes to meld flavors.
  5. Taste and adjust seasoning as needed. Serve warm.
Recipe Notes

Sauerkraut varies in saltiness; taste the broth before adding additional salt. 

The apple adds brightness and balances the tang of the sauerkraut.
