Asparagus with Balsamic Tomatoes

Ingredients

asparagus, trimmed

tsp.
extra virgin olive oil
1 1/2
cups
grape tomatoes, halved
1/2
tsp.
fresh garlic, minced

Tbsp.
balsamic vinegar
1/2
tsp.
salt and pepper, to taste

Tbsp.
goat cheese, crumbled
Instructions
Cook asparagus in boiling water 2 min. or until crisp-tender; drain.
Heat olive oil in a large skillet over medium-high heat.
Add tomatoes and garlic; cook 5 minutes.
Stir in vinegar, salt, and pepper; cook 3 minutes.
Top asparagus with tomatoes. Sprinkle with cheese and pepper.
Serve with crusty bread, rice, or pasta. Asparagus can also be grilled, baked, or pan-fried.
