Asparagus with Balsamic Tomatoes
Healthy and delicious with a touch of spring!

Ingredients
  • 1lb. asparagus, trimmed
  • 2tsp. extra virgin olive oil
  • 1 1/2cups grape tomatoes, halved
  • 1/2tsp. fresh garlic, minced
  • 2Tbsp. balsamic vinegar
  • 1/2tsp. salt and pepper, to taste
  • 3Tbsp. goat cheese, crumbled
Instructions
  1. Cook asparagus in boiling water 2 min. or until crisp-tender; drain.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add tomatoes and garlic; cook 5 minutes.
  4. Stir in vinegar, salt, and pepper; cook 3 minutes.
  5. Top asparagus with tomatoes. Sprinkle with cheese and pepper.
  6. Serve with crusty bread, rice, or pasta. Asparagus can also be grilled, baked, or pan-fried.
