Baked Chicken Two Ways
An easy way to prep your protein for the week.

Ingredients
  • 6-8 chicken breasts or thighs
  • 1 Tbsp olive oil
  • 2 seasoning blendsi.e. Harissa, Italian, Spike, Taco Seasoning, or Season Salt
Instructions
  1. Preheat oven to 400 degrees
  2. Layout chicken breasts or chicken thighs. Giving 1 inch or so in between pieces.
  3. Toss half of the sheet tray with seasoning 1
  4. Toss half of the sheet tray with seasoning 2
  5. Roast until chicken reaches internal temp of 165 degrees for chicken breasts and 175 degrees for chicken thighs
  6. Let the chicken rest for 10 minutes and then slice before storage. Slicing the chicken before the fridge means you can easily toss this in salads and more evenly reheat in the microwave for any warm dishes.
