Beans with Tomatoes and Swiss Chard

Ingredients
  • 1Tbsp olive oil
  • 1medium onion, chopped
  • 1clove garlic, minced
  • 6whole mushrooms, roughly chopped
  • 1medium tomato, cubed
  • 1can navy beans, drained and rinsed
  • 1/2bunch swiss chard, roughly chopped
  • 1pinch salt and pepper, to taste
  • 1Tbsp Parmesan cheese, grated for garnish
  • 1Tbsp basil or thyme for garnish
Instructions
  1. Heat oil in pan and add onions, cooking until translucent, about 5 minutes.
  2. Add garlic and cook until golden, about 3 minutes.
  3. Add mushrooms and cook until softened and golden.
  4. Add tomato and cook, stirring occasionally.
  5. Add the beans and cook until they are warmed through.
  6. Add Swiss chard last, cooking until greens break down to your liking.
  7. Garnish with cheese & herbs.
Recipe Notes

Serving ideas: Serve over rice, pasta, or with crusty bread. Add cooked chicken, or any of your favorite vegetables.
