Ingredients
  • 8oz samyeon (thin wheat noodles)or buckwheat/soba noodles
  • 1 cucumberjulienned
  • 1cup kimchi
  • 2 boiled eggs
  • sesame seedscrushed, for garnish
  • green onionsminced, for garnish
Sauce
  • 3tbsp Gochujang (Korean chili paste)
  • 2tbsp soy sauce
  • 2tbsp sesame oil
  • 2tbsp white vinegaror rice vinegar
  • 3cloves garlicminced
  • 1 1/2tbsp sugaror honey
  • 1tbsp toasted sesame seeds
Instructions
  1. Combine all sauce ingredients in a bowl and set aside.
  2. Cook noodles according to package instructions. Drain and rinse the noodles in ice-cold water, rubbing them with your hands to remove excess starch. Drain well and place in a bowl.
  3. Add the sauce over the noodles and mix together until the noodles are evenly coated. Garnish and enjoy!
