Preheat oven to 400 degrees Fahrenheit. Prick sweet potatoes with a fork in several places. Place in a baking dish and bake until tender, about 45-50 minutes.
Add in the spices, salt, and black beans. Stir and cook for an additional 3-5 minutes.
Once the sweet potatoes are done baking, let cool slightly. Cut each sweet potato lengthwise then create a well in the center of each half using a spoon.
Spoon the bean mixture into the well of each potato half and top as desired. We recommend sour cream, shredded cheddar cheese, and green onion. Avocado, cilantro, and diced tomatoes or salsa would be great additions too!
