Ingredients

coconut oil

lime, freshly juiced

honey
1/2
tsp
cayenne pepper

cod fillets

unsweetened coconut shreds
1/2

panko breadcrumbs
Instructions
Preheat oven to 425 degrees F.
Coat baking dish with coconut oil.
Combine the lime juice, honey and cayenne pepper and add to a medium bowl.
Rinse fish and pat dry.
Combine coconut and panko in a large bowl.
Coat fish in lime & honey mixture then coat well in the coconut mixture.
Place on baking sheet and bake for 18 minutes, or until the coconut turns a golden brown.
