Ingredients
Coffee rub ingredients
  • 1Tbsp Just Coffee Co-op organic coffee
  • 1tsp unsweetened cocoa powder
  • 2Tbsp brown sugar
  • 1/2tsp cayenne pepper
  • 1/4tsp cinnamon
Fajita ingredients
  • 2lbs Thousand Hills 100% grass-fed beef T-bone steaks
  • 4 bell peppers, sliced
  • 2 yellow onions, sliced
  • 2tsp cumin
  • 1Tbsp olive oil
  • 1pinch salt, to taste
  • 1 lime, cut into wedges
  • 1 jalapeño, sliced
Instructions
  1. To make coffee rub, add brown sugar, coffee, cocoa powder, cayenne pepper and cinnamon in a bowl. Mix well to combine.
  2. Set broiler on high. Season steak with salt and 1 tsp cumin, then generously cover with coffee rub. Broil for 6 minutes per side.
  3. While steak is broiling, slice bell peppers and onions and place on large baking sheet. Drizzle vegetables with olive oil, then sprinkle with salt and cumin. Place baking sheet in broiler for 6 minutes (when flipping steaks).
  4. Remove veggies and steak from broiler. Slice steak and mix with peppers and onions. Place on large serving platter and garnish with jalapeno slices and lime wedges.
  5. Serve with your choice of flour tortillas, tortilla chips, salsa, guacamole or avocado slices.
