Ingredients
  • 2tbsp olive oil
  • 1/2 yellow onion, diced
  • 2cups vegetable broth
  • 1tsp smoked paprika
  • 1tsp salt
  • 1 pinch of cayenne pepper
  • 2lbs Collard Greens
  • 1/4cup sundried tomatoes, chopped
  • 3cloves 1 garlic clove minced
  • 1tbsp sherry vinegar (red wine, champagne, or white distilled vinegar work as well)
Instructions
  1. Sautee yellow onion in olive oil for 4 mins.
  2. Add vegetable broth, paprika, salt and cayenne pepper.
  3. Add cleaned and chopped collard greens to pot and cover with a tight fitting lid.
  4. Simmer on low heat for 30 minutes.
  5. At 30 minutes add sundried tomato, garlic, and stir.
  6. Simmer for 20 more minutes or until greens are very tender.
  7. Remove from heat and add vinegar. Give it one more good stir and taste so you can adjust the seasonings. See notes for additional seasoning ideas.
Recipe Notes

If you try your greens and they are lacking in flavor, you could try adding some hot sauce, smoked salt, or liquid aminos.
