Preheat oven to 375° F. Preheat skillet on medium-high heat.
Cut jalapeños in half lengthwise and then core out the center and seeds with a spoon. (Leave some seeds in the jalapeños if you enjoy the spice).
Stuff each half with your desired amount of cream cheese (the more the better).
Cut bacon strips in half and fry until cooked through but not crisped. The bacon needs to remain soft and pliable enough to wrap.
Wrap each piece of bacon around a jalapeño half and skewer with a toothpick. Place jalapeños on a baking sheet and bake for 15 minutes so the bacon crisps and the jalapeños become tender-crisp. Enjoy!
