Ingredients
  • 1cup dried brown lentils
  • 1 1/2cups vegetable broth
  • 1 15 oz. can diced tomatoes
  • 1/4cup + 1 Tbsp. tomato paste
  • 1 onion, chopped fine
  • 1/2 green bell pepper, chopped
  • 1Tbsp. apple cider vinegar
  • 3cloves garlic, minced
  • 1 1/2tsp. oregano
  • 1 1/2tsp. smoked paprika
  • 2tsp. dried parsley
  • 1tsp. cumin
  • 1Tbsp. chili powder
  • 1tsp. salt
  • 1tsp. ground black pepper
Instructions
  1. Put all ingredients in your crockpot. Cover and cook on high for 3-4 hours or on low for 7-8 hours.
  2. Check for consistency; you may need to remove the lid for the last 30 minutes.
  3. Serve warm in buns or as a side dish. Leftover sloppy joe mixture will keep in the refrigerator up to 3 days.
