Cumin-Roasted Sweet Potatoes

Ingredients
  • 1lb sweet potatoes
  • 2Tbsp. olive oil
  • salt and pepper, to taste
  • Cumin to taste
Instructions
  1. Preheat oven to 375°F and line a baking sheet with parchment paper (or spray baking sheet with nonstick cooking spray).
  2. Wash, peel and chop sweet potatoes into ½-inch cubes.
  3. Place cubes on greased or parchment paper-lined baking sheet. Drizzle with olive oil and sprinkle with salt, pepper and cumin to taste. Toss with hands until each cube is well-coated.
  4. Roast for 40 minutes or until desired doneness.
