Delicata Squash Salad

Ingredients
  • 1 roasted Delicata squashsliced
  • 2cups mixed greens
  • 2tbsps pepitas (toasted pumpkin seeds)
  • 1tbsp goat cheesecrumbled
  • 1/2cup dried cranberries
  • vinaigrette of choicestore-bought or homemade
Instructions
  1. Place the mixed greens in a serving bowl.
  2. Arrange roasted squash slices on top.
  3. Sprinkle with pepitas, dried cranberries and goat cheese.
  4. Drizzle with vinaigrette just before serving and toss gently.
Recipe Notes

A simple vinaigrette can be made by whisking 3 parts olive oil to 1 part vinegar, with a pinch of salt and a touch of mustard.
