In a heavy pot, melt the butter (or bacon fat or olive oil) over medium heat. Add the onion, carrot, and celery. Cook slowly until softened, about 8 minutes. Do not rush this. Flavor starts here.
Add the garlic and cook for 30 seconds.
Add chopped Harmony Valley Soup Mix and cook 2 minutes.
Add rice, stock and salt. Bring to a boil, then reduce to a steady simmer.
Simmer uncovered for 60-90 minutes, stirring occasionally. Add water as needed. You want it thick. Soup is done when the veggies are cooked and start to fall apart.
Using a wooden spoon, gently mash the softened veggies against the side of the pot to thicken the soup.
Add miso paste and black pepper, stir to heat through.
Finish with a small splash of vinegar if the flavor feels flat.
