Fried Egg & Pancetta Sandwich
Fried-egg sandwiches are resonant of childhood for many people. Here’s a grown-up version as simple, basic, and satisfying as the childhood one.

Ingredients
  • 2whole stirato rolls
  • 1Tbsp mayonnaise
  • 1/2cup salad greens
  • 2 rolled slices pancetta, approx. 5 inches wide
  • 2large duck eggs
  • 1 pinch salt and pepper
Instructions
  1. Cut stiratos in half; add thin coating of mayonnaise, and a small handful of greens to one side.
  2. Heat an 8- or 10-inch heavy skillet on medium-high; once it is hot, lay a rolled slice of pancetta in pan, turn heat to medium, and allow pancetta to fry until some of its fat has tried out.
  3. Crack one duck egg emphatically on a hard surface and pour into pan atop slice of pancetta. Cook to your preference, then turn the pancetta-egg package over with a spatula. When second side is done to your taste, pile the egg & pancetta on the bottom slice of stirato, add salt and pepper to taste, top with other slice, and serve.
  4. Repeat for second sandwich.
