Add 1 Tbsp olive oil to a small pan and heat on medium-high heat for 30 seconds to 1 minute. Place pine nuts in pan and toast until golden brown. Remove pine nuts from pan and place in a food processor.
Add peas, mint, garlic, and freshly grated cheese to food processor. Pulse to combine ingredients.
With food processor running on low, slowly pour in 1/3 cup olive oil until all ingredients are well combined, about 2 minutes.
Taste and add in salt and pepper to your liking. Blend to combine.
Serve on crostini, with pasta, or use as a healthy dipping sauce for fresh veggies.
