Grilled Seitan with Chimichurri Sauce

Ingredients
  • 1cup fresh lemon juice
  • 1cup extra virgin olive oil
  • 3cloves garlic, minced
  • 1/4cup agave nectar
  • 1tsp. sea salt
  • 1/2cup finely chopped parsley
  • 1cup finely chopped cilantro
  • 1 1/2lb. seitan, cut into 2-inch pieces
  • 1batch prepared Chimichurri Sauce
Instructions
  1. Add lemon juice, olive oil, garlic, agave, sea salt, parsley, and cilantro to a blender. Blend on high speed until mixed well.
  2. Add seitan pieces to a shallow dish. Pour marinade over the seitan and refrigerate for one hour.
  3. Preheat grill to medium heat.
  4. Prepare metal skewers by placing several pieces of seitan on each skewer.
  5. Grill the skewers for 4-5 minutes per side, or until grill marks appear. Drizzle with chimichurri sauce.
