Ingredients
Salad Ingredients:
  • 2 1/2cups dried pearl couscous
  • 5cloves garlic, minced
  • 1each tomato, diced
  • 1medium cucumber, chopped
  • 1 1/2 cups feta, crumbled
  • 1/2cup parsley, chopped
  • 1/4cup mint, chopped
Dressing Ingredients:
  • 2Tbsp. lemon juice
  • 4Tbsp. extra virgin olive oil
  • 1Tbsp. yogurt (optional)
  • 1/2tsp. honey (optional)
  • 1tsp. cumin
  • 1tsp. dried or fresh parsley
  • 1pinch salt and pepper, to taste
Instructions
  1. Bring a medium saucepan of salted water to a boil and add minced garlic and couscous. Cook until tender, around 8-10 min. Drain, then add to a large bowl.
  2. While the couscous is cooling, make the dressing. Whisk lemon juice, olive oil, yogurt, honey, herbs and spices until it looks blended. Season to taste and add salt and pepper to your liking.
  3. Mix in the couscous to the dressing, mix those well, and set aside while you assemble your salad mix.
  4. Prep your arugula, cucumber, cherry tomatoes, feta, and herbs then add to the top of couscous dressing mixture.
  5. Toss the final salad mix and add some crumbled feta to the top for garnish. Enjoy!
