Continue roasting (if using oven) or turning (if using skillet) for about 15 minutes. Then add maple syrup to pan or skillet, toss potatoes to coat with the syrup, and cook for another 15 minutes.
Test for doneness with a sharp knife. If they’ve cooked through thoroughly, remove ASAP so they don’t stick to the pan or skillet.
Cooking tip: add pecans to the pan during the last few minutes for a delicious, nutty treat.
