2cupsmatzo meal
1 1/2lbsKadejan chicken thighs
1largeFarmer’s Hen House brown egg
2tsp.kosher salt
1/4tsp. freshly ground black pepper
1Tbsp.Field Day canola oil, for frying
Instructions
Beat egg in a shallow bowl. Mix matzo flour, salt, and pepper in another shallow bowl.
Heat oil in large pan over medium-high heat.
Dip chicken thighs into egg then into matzo flour, pressing to coat and adhere ingredients to both sides. Place chicken in pan and cook until golden brown, roughly 2 minutes per side. Transfer to paper towels and pat to dry.
