Mediterranean Pasta Salad

Ingredients
  • 12oz. pasta, cooked to package instructions
  • 2cups halved cherry tomatoes
  • 1/3cup Kalamata olives
  • 1can garbanzo beans, drained and rinsed
  • 2cups arugula
  • 1 red bell pepper, diced
  • 1/2medium red onion, diced
  • 1medium cucumber, diced
  • 1cup feta cheese
  • 1cup basil leaves torn
  • 1/2cup extra virgin olive oil
  • 3Tbsp. lemon juice
  • 1tsp. Dijon mustard
  • 3 garlic cloves, minced
  • 1/2tsp. oregano
  • 1/2tsp. dried basil
  • 1/4tsp. thyme
  • ¼tsp. red pepper flakes
  • ¾tsp. sea salt
Instructions
  1. In a small bowl, whisk together the olive oil, lemon juice, mustard, garlic, herbs and salt.
  2. Add the pasta to a large bowl with the tomatoes, olives, garbanzo beans, arugula, bell pepper, cucumbers and feta.
  3. Pour in the dressing and toss to coat.
