Ingredients
2Tbsp.olive oil
1mediumonion, diced
3mediumcarrots peeled and diced
2mediumcelery stalks, diced
2clovesgarlic, minced
1bay leaf
1tsp.dried thyme
1/2tsp.dried rosemary
16oz.mushroomssliced
4cupsvegetable broth
1cupwater
1/2cupdry quinoa, rinsed
1/2tsp.salt
1/2tsp.pepper
Instructions
Place oil in large pot over medium heat.
Add the onion, carrots, and celery and cook until tender, about 5 minutes.
Stir in the garlic, bay leaf, thyme, rosemary, and mushrooms. Cook for 5-7 minutes.
Pour in the vegetable broth and water and bring to a boil. Add the dry quinoa, salt and pepper cook on low for 25 minutes, or until the quinoa is cooked. Serve warm!
