Ingredients
  • 6tbsp unsalted buttermelted
  • 2 peachessliced
  • 3/4cup sugar
  • 1.5tbsp sugar(for peaches)
  • 3/4cup flour
  • 1 + 3/4tsp baking powder
  • 3/4cup milk
  • 1/4tsp salt
  • 1tsp vanilla bean pasteOR 1 tsp vanilla extract
  • 1pint vanilla ice creamfor serving
Instructions
  1. Preheat oven 350 degrees
  2. Sprinkle sliced peaches with 1.5 tbsp of sugar
  3. Whisk flour, baking powder, sugar and salt in a bowl.
  4. Mix butter, milk, and vanilla in another bowl.
  5. Mix wet ingredients into dry, mixing until just incorporated.
  6. Pour Buckle batter into 9 inch pan.
  7. Layer peaches on top of mixture, poking them down into the batter.
  8. Bake 45-55 minutes – This bakes up gooey on the inside and crispy on the top.
  9. Serve warm with a scoop of ice cream on top.
Recipe Notes

This dish doesn’t keep very well, so you might as well invite a few friends and eat the whole thing! Leftover could be stored in the fridge and might work best crumbled into Greek yogurt in the morning.
