Ingredients
  • 1/2cup butter, softened
  • 1cup sugar
  • 1/4tsp. vanilla
  • 3 eggs
  • 3 ripe, pureed persimmons
  • 1Tbsp. water
  • 2cups flour
  • 1tsp. salt
  • 1tsp. baking soda
  • 1/2cup nuts (optional)
Instructions
  1. Cream together the butter and sugar until fluffy.
  2. Add vanilla. Add eggs one at a time. Beat well.
  3. Add the pureed persimmons and water.
  4. In a separate bowl, sift together flour, salt and baking soda.
  5. Add flour mixture to batter along with the nuts, if using.
  6. Mix until smooth.
  7. Pour into a loaf pan and bake at 350° F for 50-60 minutes.
  8. Cool before cutting.
