Ingredients
1medium red onion
1cupwater
½cupapple cider vinegar or red wine vinegar
½cupdistilled white vinegar
1Tbsp.sugar or honey
1tsp.salt
1tsp.whole peppercorns
2clovesgarlic, crushed (optional)
Instructions
Cut the onion into very thin slices, separate the rings, and place in a large, clean glass jar. Add peppercorns and garlic, if using.
Make the brine in a small bowl or liquid measuring cup: Whisk together the water, vinegars, salt and sugar until the salt and sugar are fully dissolved.
Pour the brine over the onions. The onions should be fully submerged; add an extra splash of water or vinegar if needed. Place the lid on the jar and seal.
Refrigerate for at least 2 hours, then enjoy the onions in your favorite dishes.
