Honey Roasted Squash Salad

Ingredients
  • 1Tbsp. olive oil
  • 1/2tsp salt
  • 1pinch pepper to taste
  • 1cup dried cranberries
  • 2Tbsp. honey
  • 1/4cup crumbled feta
  • 4ounces arugula
  • 1/2cup walnuts, chopped
  • 1 squash of choice, cubed
Instructions
  1. Pre-heat oven to 400 degrees F.
  2. Lightly coat a baking sheet with olive oil
  3. Add cubed squash to the sheet along with olive oil and salt and pepper.
  4. Roast for 20-25 minutes, turning once, until tender.
  5. Remove from oven and add feta and honey.
  6. Place arugula in a bowl and when cool, add the squash mixture, walnuts, dried cranberries and serve.
