Rose McGee’s Sweet Potato Comfort Pie

Ingredients
  • 4medium sweet potatoes, baked and removed from skins
  • 2 cups granulated sugar
  • 1/2cup brown sugar
  • 1stick butter, melted
  • 2large eggs, lightly beaten
  • 1tsp. ground ginger
  • 1Tbsp. ground nutmeg
  • 1Tbsp. ground cinnamon
  • 2Tbsp. vanilla extract
  • 1cup sweetened condensed milk
  • 1whole lemon, juiced, seeds removed
  • 2whole unbaked pie crusts
Instructions
  1. Preheat oven to 400°F. In a large mixing bowl, mash the cooked sweet potatoes.
  2. Using a hand-mixer or stand mixer, blend in sugars, then eggs and then the melted butter.
  3. One at a time, add next 6 ingredients; mix well.
  4. Pour mixture into pie crusts. Reduce heat to 350°F. Bake for 60 minutes.
  5. Remove from oven. Allow pies to set (firm up) for at least 30 minutes. Eat warm or allow to cool longer before eating.
Recipe Notes

Note: Sweet potato pie can be left at room temperature up to two days without refrigeration. Can be refrigerated up to one week and remain fresh. Can also be frozen.
