Adjust to preferred sweetness.

Instructions
Ginger Simple Syrup
Add sugar, water, and ginger to a small pot and simmer until liquid has reduced by half.
Remove from heat and cool completely. Strain into a jar or container.
Sparkling Ginger Pear Mocktail
Fill glass half full with ice.
Add pear juice, simple syrup, and stir.
Use microplane to place a very light dusting of the cinnamon stick and star anise into the glass and stir.
Top with soda water, stir and garnish with pear slices, star anise, and cinnamon stick.
