Spicy Cranberry Chutney
Sweet and tart with a little spice, this flavorful chutney zests up turkey, chicken, pork or tofu.

Ingredients
1/4
cup
dried apricots, finely chopped
1/2
cup
dark brown sugar, packed
1/2
cup
golden raisins
1
cup
water
3
cups
fresh cranberries

Granny Smith apple, chopped
1
tsp.
lime zest
1/4
cup
fresh lime juice
1/4
cup
crystallized ginger, finely chopped
1/2
tsp.
crushed red pepper flakes
Instructions
In a saucepan, mix apricots, brown sugar, raisins and water. Bring to a boil. Reduce heat and simmer 5 minutes, stirring constantly.
Add cranberries, apple and lime zest. Simmer for 10 minutes.
Mix in lime juice, crystallized ginger and red pepper flakes. Serve at room temperature or chilled over your favorite protein or spread on bread.
