Spicy Cranberry Chutney
Sweet and tart with a little spice, this flavorful chutney zests up turkey, chicken, pork or tofu.

Ingredients
  • 1/4cup dried apricots, finely chopped
  • 1/2cup dark brown sugar, packed
  • 1/2cup golden raisins
  • 1cup water
  • 3cups fresh cranberries
  • 1 Granny Smith apple, chopped
  • 1tsp. lime zest
  • 1/4cup fresh lime juice
  • 1/4cup crystallized ginger, finely chopped
  • 1/2tsp. crushed red pepper flakes
Instructions
  1. In a saucepan, mix apricots, brown sugar, raisins and water. Bring to a boil. Reduce heat and simmer 5 minutes, stirring constantly.
  2. Add cranberries, apple and lime zest. Simmer for 10 minutes.
  3. Mix in lime juice, crystallized ginger and red pepper flakes. Serve at room temperature or chilled over your favorite protein or spread on bread.
