Sweet Potato Black Bean Bowls with Cilantro Lime Vinaigrette

Ingredients
  • 2cups cooked fluffy brown rice
  • 2cups cooked simple black beans
  • 1/2 the roasted sweet potatoes
  • 1bunch cilantro
  • 1 lime
  • 1tsp. granulated garlic
  • olive oil, salt and pepper
Fluffy Brown Rice
  • 2cups brown rice
  • salt and pepperto taste
Simple Black Beans
  • 1cup dry black beans
Roasted Sweet Potatoes
  • 2 sweet potatoes
  • 3tbsp oil
  • salt and pepperto taste
  • garlicoptional, to taste
  • paprikaoptional, to taste
Instructions
Fluffy Brown Rice
  1. Rinse 2 cups brown rice.
  2. Add rice and 4 cups water to a pot with a tight-fitting lid. Season with salt and pepper.
  3. Bring to a boil and reduce heat to low. Simmer for 25-30 minutes or until water is absorbed and rice is soft.
Roasted Sweet Potatoes
  1. Heat oven to 400°F.
  2. Peel sweet potatoes and dice into 1/2″ cubes.
  3. Toss sweet potatoes with 1 Tbsp. oil and seasonings of your choice (salt and pepper, garlic, paprika, etc.).
  4. Place directly on a baking sheet and roast 20 minutes, or until caramelized and fork-tender.
Simple Black Beans
  1. Rinse beans.
  2. Cover with boiling water in a glass bowl and allow to soak for 30-60 minutes.
  3. Drain and add to a large pot with enough fresh water to cover by 2 inches.
  4. Bring to a boil, reduce heat to low, and simmer for 1-2 hours until beans are tender. Season with salt and pepper.
Assembling the Bowl
  1. Wash and dry produce. Remove cilantro leaves from stems and mince leaves. Zest and juice one lime.
  2. Assemble prepped ingredients: rice, black beans, and sweet potatoes.
  3. In a small bowl, combine 6 Tbsp. olive oil, 3 Tbsp. chopped cilantro, lime zest and juice, and salt and pepper to taste. Whisk together to make vinaigrette. (Or add all ingredients to a blender and blend until smooth.)
  4. Serve brown rice, roasted sweet potatoes, and black beans in bowls. Top with cilantro lime vinaigrette. Enjoy!
