1-2sweet potatoes, peeled and chopped into small cubes
1/2onion, chopped
2green onions, sliced
1red bell pepper, chopped
2-3tbspoil
salt and pepper, to taste
1/8tspcayenne pepper
Instructions
Heat the oven to 350 degrees.
Toss the chopped sweet potatoes with oil, cayenne pepper, salt, and pepper. Spread them on a sheet tray and roast for 15 minutes.
Add the chopped onion and red bell pepper to the sheet tray. Toss everything together and return to the oven for about 10 minutes, or until the vegetables are tender and lightly browned.
Remove from the oven and serve warm. Sprinkle the sliced green onions over the top.
