Ingredients
  • 3cups water
  • 2 1/2cups vegetable broth
  • 1lb unpeeled potatoes
  • 8oz chickpeas, cooked
  • 3large carrots, peeled
  • 1medium onion
  • 1stalk celery
  • 8oz button or cremini mushrooms, sliced
  • 2/3cup barley
  • 2Tbsp soy sauce or aminos
  • 1tsp thyme
  • 1tsp rosemary
  • 1/2tsp salt
  • 1pinch black pepper, to taste
Instructions
  1. Cut all veggies into large stew-like chunks, including potatoes.
  2. In a large pot combine water, vegetable broth, barley, onions, and salt. Bring to a boil and cook at medium heat for about 20 minutes. Add in the potatoes and cook for another ten minutes.
  3. Next add the carrots, chickpeas, celery, mushrooms, soy sauce and all spices and cook for another 20 minutes on a low setting. Now you are ready to serve this traditional Irish dish.
