Ingredients
  • 2Tbsp. ground flaxseed meal + 6 Tbsp. water
  • 1cup canned pumpkin puree
  • 1/2cup applesauce
  • 1cup brown sugar
  • 1/2cup flax milk (or non-dairy milk of choice)
  • 1tsp. vanilla extract
  • 1 2/3cups Bob’s Red Mill Gluten Free 1-to-1 Baking Flour
  • 1/2tsp. baking powder
  • 1tsp. baking soda
  • 1tsp. cinnamon
  • 1/2tsp. nutmeg
  • 1/4tsp. ginger
  • 1/2tsp. salt
  • 1/4cup vegan chocolate chips
Instructions
  1. First, mix ground flaxseed meal and water and set aside for 5 minutes to thicken.
  2. Preheat oven to 350 degrees and lightly oil a loaf pan.
  3. In a medium bowl, mix together the pumpkin, applesauce, sugar, milk, vanilla extract and flax seed mixture.
  4. In a separate bowl, add the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt and stir to combine.
  5. Slowly add the dry ingredients to the wet ingredients, mixing well.
  6. Pour the batter into the oiled pan, and top with chocolate chips.
  7. Bake for 45-55 minutes, or until cooked through.
