Vegetable Fried Rice
A vegan fried rice packed with vegetables.

Ingredients
  • 1 1/2cups dry brown rice
  • 1cup broccoli, chopped
  • 1/4cup green onions, chopped
  • 8ounce mushrooms
  • 1cup cabbage, shredded
  • 1 carrot, shredded
  • 2cloves of garlic minced
  • 1cup frozen peas
  • 1cup frozen green beans
  • 1/2tsp sea salt
Instructions
  1. Cook the brown rice according to instructions and refrigerate overnight.
  2. Heat oil in large skilled. Add broccoli, green onions, mushrooms, cabbage, carrot, and garlic to pan. Cook for 6-7 minutes, or until vegetables begin to soften.
  3. Add peas and green beans and cook for 1-2 minutes. Add rice and sea salt and stir, cooking for 1-2 minutes until rice is warm.
