Ingredients
- 1/4 cup whole milk
- 3 Tbsp. cane sugar, divided
- 1 lage egg yolk
- 3 oz. bittersweet chocolate, finely chopped
- 1/8 tsp. sea salt
- 2 Tbsp. unsalted butter, softened
- 1/2 cup heavy cream

- In a small saucepan, combine milk and 2 tablespoons of sugar. Heat until sugar is dissolved. Remove from heat.
- Put egg yolk in a small bowl and slowly whisk in hot milk.
- Return mixture to saucepan and cook over medium heat, stirring until slightly thickened.
- Remove from heat and add chocolate, butter, and salt. Combine until smooth.
- Pour custard into two bowls and chill for several minutes.
- Meanwhile, beat heavy cream with remaining sugar until soft peaks form. Add to the top of custard before serving.
