Ingredients
- 1 can black beans, drained and rinsed
- 1/4 cup fresh cilantro, chopped
- 1/4 cup red onion, finely diced
- 1 tsp. ground cumin
- 3 medium tomatoes, seeded and diced
- 1 medium lime, juiced
- 1 medium yellow bell pepper, diced
- 1 small jalapeno, seeds removed and finely diced
- To taste salt and freshly ground black pepper
- 4 medium avocados (should be slightly soft to the touch) sliced in half and pitted
- 1 Tbsp. olive oil
- 1 tsp. chili powder
- 1 bag tortilla chips for serving

Instructions
- Preheat your grill for medium-high heat.
- In a medium bowl, combine the beans, cilantro, red onion, cumin, tomatoes, lime juice, bell pepper and jalapeno. Season with salt and pepper.
- Brush the cut sides of the avocados with olive oil and sprinkle with the chili powder and season with salt and pepper.
- Place on the grill cut-side down. Cook until charred, about 2 minutes.
- Fill each avocado with the prepared black bean salsa mix and serve with tortilla chips.
