Ingredients
- 2 Tbsp. olive oil
- 1 medium onion
- 1 lb. ground turkey
- 2 Tbsp. chili powder
- 2 tsp. garlic powder
- 2 tsp. cumin
- 2 tsp. maple syrup
- 2 medium limes, juiced
- 1/2 cup salsa
- 2 cups red cabbage or kale, chopped
- 3 Tbsp. cilantro minced
- 1 Tbsp. apple cider vinegar
- 1 Tbsp. honey
- 1 pinch salt and pepper, to taste
Optional toppings
- 1 package cherry tomatoes, halved
- 1/2 bunch cilantro, chopped
- 1 dash hot sauce
- 1 medium avocado, sliced or mashed
- 1 bag tortilla chips, crushed
- 1 cup rice, uncooked

- Place olive oil in a large skillet over medium-high heat and sauté onion and ground turkey for about 5 minutes or until meat is fully cooked. Add spices, salsa, maple syrup, and juice from 1 lime, and mix until combined. Set aside.
- While cooking, mix together your slaw: chopped kale or red cabbage, 3 Tbsp. cilantro, juice from 1 lime, apple cider vinegar, honey, and salt and pepper to taste.
- Prep each taco bowl with a base of crushed chips or rice, top with a scoop of the taco meat, the slaw, and finish with toppings as desired (tomatoes, avocado, cilantro, yogurt, hot sauce, cheese, etc.).
