Ingredients
- 2 Tbsp. cooking oil
- 1 lb. Ferndale ground turkey
- 2 cloves garlic, minced
- 1 small yellow onion, diced
- 1 small head of broccoli, chopped
- 2 small sweet potatoes, diced
- salt and pepper, to taste
- spices, to taste*
- 1/2 cup shredded mozzarella cheese, for serving
- cooked quinoa or brown rice, for serving

Instructions
- Heat the oil in a cast iron skillet over medium-high heat.
- Add the ground turkey and garlic, using a wooden spoon to break up the turkey as it cooks. Season with salt and pepper to taste. Cook for about 5 minutes, stirring occasionally.
- Add the onions and cook until starting to soften, about 2 minutes.
- Add broccoli, sweet potatoes, desired spices* and a dash of salt and pepper, to taste.
- Cover the skillet and cook, stirring occasionally, until the broccoli and sweet potatoes are tender. Add a splash of water or broth to help the potatoes cook faster.
- When the vegetables are tender, sprinkle on the mozzarella and let melt.
- Serve turkey and vegetable mixture over your favorite cooked grain. Enjoy!

*This adaptable recipe provides a great foundation for your favorite flavors. Try Italian seasoning and a pinch of red pepper flakes, or season with chili powder and cumin for southwest flair. You can also flavor the dish with your favorite fresh herbs, like rosemary and thyme!
