This syrup can work as a sweeter substitute for bourbon in your mocktails. Add in some mint for your own NA Mint Julep!

Ingredients
  • 2 cups water
  • 1 tbsp loose leaf black tea We use Lapsand Souchong for smokiness
  • 1 tsp apple cider vinegar
  • 1.5 cups sugar We used demerara because it has a lot of depth
  • 1 tsp vanilla bean paste or vanilla extract
  • pinches smoked salt to taste
  • 1 clove

Instructions
  1. Steep the tea in the 2 cups of boiling water for 7 minutes. You are looking for strong flavor, but not bitter flavor.
  2. Remove tea leaves.
  3. Add all other ingredients to hot tea.
  4. Simmer for 5-10 minutes until the sugar dissolves. Remove clove.
  5. Cool.
  6. Store in a glass jar or bottle in the fridge. Keeps about 1-2 weeks.
Adding mint to this syrup
  1. Blanch mint for 15 seconds.
  2. Blend mint and bourbon syrup in blender for 10-15 seconds. Strain through fine sieve or cheese cloth. You could also leave the bits of mint in.
Recipe Notes

Add this syrup to iced coffee, iced tea, lime flavored sparkling water, or other drinks of your choice for a sweet and smokey beverage.
